Recently, I received my first crate of vegetables from a CSA farm share, so I made this tasty gorgeous salad. Below is the recipe.
I used local chestnut mushrooms, but any wild mushroom will work. Also, feel free to add or replace with any vegetable in season.
- 1 bunch Broccolini
- 1/2 lb Wild mushroom
- 1/2 lb Fava bean
- 1/4 cup quinoa
- 2 cup baby arugula
- 2 tbsp olive oil
- 1 tbsp Balsamic vnegar
- 1 tsp honey
- 1 garlic grated
