Ponzu

Ingredients
  • 1/2 cup citrus juice try to combine a few different fruits for deeper flavor
  • 1/2 cup soy sauce
  • 1/4 cup dried bonito flakes
  • 2 x 1 inch piece kombu
  • 2 tablespoon mirin
Instructions
  1. In a bowl, combine all the ingredients. Let sit for at least overnight as it gets better after a few days. Strain. Keeps in the refrigerator for up to a month.
