I had a nice salad similar to this at Masa Bar in New York City. It was a very simple salad, but I really enjoyed the wasabi dressing that they used. Of course I don’t remember exactly how the taste was, but I am happy with this version that I created. Besides the dressing, the key is to use crunchy greens like watercress and to add a meaty flavor like that of the imitation crab sticks. Probably Tuscan kale would work well also.
Watercress Salad with Wasabi Dressing

Ingredients

- 1 bunch watercress washed and cut into bite sizes
- 1/4 red onion thinly sliced
- 3-4 imitation crab sticks shredded

- 1/2 cup sour cream
- 1 tablespoon mirin
- 2 tablespoon soy sauce
- 2 teaspoon rice vinegar
- 2-3 teaspoon wasabi
Instructions

Whisk all the dressing ingredients in a bowl. Combine all the salad ingredients in a large bowl. Toss with wasabi dressing, and serve immediately.
